Jackied Chocolate Chip Cookie Dough......Hummus


Yes, I had to give this recipe a try! I did tweak it some as usual, and it was DELICIOUS!! My hubby thought it was actual cookie dough when he saw it and when he tasted it, he said he could easily eat the entire bowl in one sitting. Thankfully he did not. FYI, just because this is hummus does not mean you have to eat it with crackers or anything else, you can quite literally eat it with a spoon. The next time I make this, I will probably add less water so it's a little firmer and roll it into balls so that I have cookie dough bites. That would be something my husband can throw in his lunch or I can grab a couple on my way out the door. Let me know what you think of the recipe. I will be posting a video on it soon. By the way, this only lasted like 3 days in our home and I think the only reason it lasted that long was because the guys were limiting themselves.


Jackied Chocolate Chip Cookie Dough Hummus


Ingredients


1 15 oz can drained and rinsed Garbanzo Beans

2 Tbsp Honey

1 tsp Vanilla (Not imitation)

2 tsp Lemon Juice

1 Tbsp Coconut Oil (melted) I use unrefined organic

1/4 tsp Ginger powder

1/2 tsp Truvia or Monk Fruit or 1 Tbsp Organic Sugar

1/2 cup Peanut Butter (I use organic/natural)

Water


Instructions


Place all ingredients into your food processor. Process until well blended. Add 1 Tbsp of water, blend until reaching your desired consistency. If you'd like it to be less thick, add up to 1/2 cup of water, one tablespoon at a time until you reached the consistency you like. Stir in by hand 1/2 cup miniature or regular semi-sweet chocolate chips. The dough will firm-up when refrigerated. If you'd like to make cookie dough bites, allow the batter to be quite thick so that you are able to roll it into balls. Roll into balls before refrigerating. Keep dough refrigerated and use within 7 days.
